Large doses of spaghetti alla Carbonara and similar - I read that cyclists, before leaving for their 200 km spins in the Giro d'Italia and such, eat about three plates of it. People who can do those tours can't be wrong and it's the greatest food on earth anyway.

If only I had this problem!

I'd suggest adding more healthy fat to your diet. Things like nuts and olive oil with cooking I think tend to help keep from losing too much. You can also try eating more carbs too in the form of whole wheat breads and pasta. My favorite for keeping weight on is peanubutter and jelly sandwhiches on whole wheat bread.

Spaghetti (approximately 100g a head), bacon, grated Parma cheese, 4 yolks and 2 whites, cream, olive oil, salt, pepper.

Boil about 4 litres water, add salt, cook the spaghetti.
Chop the bacon and fry in the oil til well done.
Beat the eggs, and add cheese, salt and pepper and cream if you like.
As soon as the spaghetti are cooked, pour into a colander so the water drains off and then into a hot pan.
Add the bacon and the eggs, mix quick and serve immediately.
Try dried fruit -- raisins, dates, dried cranberries, etc. -- mixed with nuts (almonds, walnuts, etc.). Bowl of such a mix easily gives you 500 calories. Add a nice cool glass or two of skim milk, and that ought to do it.

Food with Basmati rice. Brown or white. Basmati seems to deliver the carbs a bit more slowly than other types of rice. Use it in Indian or Mexican/Spanish recipes.

Do a forum search on rowers recipes and you will find the thread to the recipe contest I ran to get rowing recipes.

Grams

Peanut butter (and jelly for me) sandwiches on multi-grain bread.

However, as long as you're eating enough nutritutionally balanced food and don't have an underweight problem, I wouldn't worry about it. As Cran says, your percentage of body fat is important to know before you decide if anything needs to be done.
