Good idea to give the recipes, Kristine! My appetizer contribution is Rumaki: since bacon is in!

1 lb pkg bacon
2 cans whole water chestnuts
1 1/4 c barbeque sauce
3/4 c to 1 c brown sugar
1/4 chopped onion

Cut bacon in half. Microwave for 2 minutes between paper towels. You don't want it too crispy and inflexible. Take one water chestnut, and wrap with one piece of bacon, stab through with a toothpick. Sprinkle a little brown sugar on bacon before wrapping.

Bake at 400 F for 15 min. Mix sauce - should be thick, yet able to pour easily. Drizzle sauce to coat.
Bake at 350 F for an additional 10-15 min or until bacon is brown.

Ooof...the Concept2 universe is on the moooove this AM, and there is positional slippage in our Lunaverse. On the upside, the slippage doesn't constitute too many meters to regain what we have lost positionally...less than 100K separates us from 10th place virtual teams rankings. That seems doable! I'm finding it harder to balance water fitness, strength training, dog walking and erging to contribute as much as previous Challenges, but will give it a go!
