I've been looking for a good "power bar" recipe for a long time, can't wait to try it! Here is a simple vege recipe that a co-worker gave us that tastes great and when served with brown rice or quinoa (or both) has lots of carbs, protein and a bit of fat. It's a one course meal that does it all (my kind of meal .)

QUOTE

You may want to double this.
1 eggplant (large)
1 onion (medium)
~3 Tbsp. of olive oil
1 tsp. tyme
2 bay leaves
and salt / pepper to taste.
Mix all in a large lazagna pan and cook in the oven for one to one and a half hours (350F) It's also good with pasta.

[right]

Rats!!! Misses an ingrediant! Also include 3 roma tomatoes (diced)

I'm not a pancake fan, but saw this recipe posted this morning from "Leslie in Austin" on Pattern Review, who got it from yet another person (I've left Leslie's credit line to Mandi in the recipe):

QUOTE

Not a traditional pancake recipe, but one that's high in protein and fiber. The results are still surprisingly fluffy and traditional tasting.

4 egg whites
1 cup cottage cheese
1 cup uncooked oatmeal
Optional sweeteners: banana, honey, splenda or a little sugar, to taste

In a blender, pulverize the oatmeal. Add the cottage cheese, eggs, and optional sweeteners. Blend until smooth.

Cook on a griddle just as you would any pancake.

I like mine served with applesauce. All the yummy, none of the guilt.

Credit where due: Mandi, a fellow PR-er who does bodybuilding turned me on to this recipe.

From the ingredients, it sounds like it could be good "fuel." I can't vouch for the taste (since I just saw it this morning), but thought I'd share a very unusual pancake recipe.

Alissa

Francois, I just made your recipe today for the "Row Power Bars." As Tony the Tiger would say, "They're Great!!!" I did make a couple of changes, some by choice, some not. I couldn't find any soy protein powder with a quick search through town so I used rice protein powder. I wanted it to be vegan so I used soy vanilla yogurt. Now I've just got to hide some of them so the kids don't eat them all . Thanks for a great recipe! John.

You have to cut down on the brown sugar since whey protein is usually flavoured and sweetened.
IMHO, there is nothing wrong with plain yogurt as it is an excellent source of calcium and potassium.

Here is a pesto recipe that my family loves. It's easy, fast and loaded with lots of phyto-chemicals, protein and essential oils.

2.5 oz. of basil (about 1 cup)
1/2 cup fresh parsley
8 sun dried tomatoes (rehydrated-just put them in boiling water for a short time)
12 oz soft tofu
1/2-1 cup boiled or steamed broccoli (optional)
1/4 cup olive oil (or you can replace up to half of this (2T) with flax oil.)
1/3 t. salt
1/4 t. pepper
either 1/2 c of dry-roasted pine nuts or slivered almonds
4-5 cloves garlic

Put everything in a blender and work it until it's fairly smooth. Warm in a pan

Cook enough pasta for 4 people and mix with the pesto. Enjoy!!
