How to drop my 2K time?? Is my goal possible?

It's definitely possible. It sounds like you're set up with a coach and team to keep you motivated, so I will give a couple suggestions.

1. Eat well-balanced meals, not just carbs or just protein.
2. Try to sneak in additional low-intensity workouts on weekends. It will woo. Just don't let those sessions turn crappy, technique wise.
3. Don't ever think you have enough endurance. Push, push, push. You may need to rebalance, but that's a different issue entirely.

This fits pretty well with my view of the rowing world - I told my son who is 6-1 ish 190 that if he worked he could get easily break 7:00 and effort would get him to 6:45 to 6:30 and that below 6:30 would take significant effort and is starting to get into the "do you have the genes for it" area. He did break 7 petty easily and this year he's on the college crew team. They are mostly on the water now but he did say he did a 7 minute 2k at a 24 rate at practice. I suspect he could go below 6:45 already.

My daughter is now rowing and I told her a similar story but added a minute to the times. I wonder if that is too aggressive for her. She's only 5-4, 125. Maybe bump them all up by another 15 seconds? I like her to have realistic goals.....

As for the OP, when my son was a sophomore he was slower than you, heavier but he was pretty chubby back then and should probably been around 150 without the chub...
