My Dad eats a peanut butter sandwich everyday for lunch. Sometimes with jelly or jam, but most times he varies it. Bananas, jalapeno peppers, radishes, olives, onions, pickles, apples, celery, carrots, raisins are some of the things I have watched him make a sandwich with. Not all at the same time, just one of these and PB.

Wow, I never knew that about pine nuts. I better check the package next time. Those cookies sound good! Is there a certain kind of pine tree you get the good nuts from? We live in a pine forest with many varieties of pine trees.

We used to love peanut butter, pickle and mayo sandwiches when I was a kid. Yeah, I know it's weird.

Image Today's episode of Bunny Trails of the Mind...

It was the pine nut discussion that started this trail...David A referenced Euell Gibbons, naturalist and author of Stalking The Wild Asparagus (I kid you not)...and while I'm pretty sure Gibbons didn't write Stalking The Wild Pine Nut, he probably thought about it. Kristine asked what kind of pine tree grows the edible pine nut...and noted that there were multiple kinds of pine trees in her location. Seems that there are about 20 different pine varieties that produce these gems here in the US...Pinon, Ponderosa, Jeffrey pines are a few. Here is a bit of a reference article (with full credit to its author!) on how this harvest might go....although that bit about the rumored aphrodisiac powers might change a harvest up a bit...

Just a quick update, since my stroke of 6 years ago I have been on cholesterol lowering meds. 6 months ago, my Doc was able to take me off and my last 2 checkups have shown a decrease in levels even without meds. :D :D :D I know that rowing has been a big factor in this along with changes in diet and many prayers.
