Well ... split times were going up, back was getting sore, knees were reminding me of their age - it was becoming un-fun.

Speaking of temps, it's currently 108 degrees, with a high of 124 expected. It's tough just to walk around. We are located about 12 miles northwest of Baghdad. I have no vehicle, and almost no phone or internet access. It should get better.
Congrats on all the milestones reached thus far, and those to come. I'm almost into my routine, so I'm really looking forward to accumulating those meters.

Chris- Hope that trout turned out tasty however you cooked it. You are starting with tasty stuff, so chances are real good it turned out well.

Here is how I cook up larger trout (2 to 6 pounders with up to 1.5 inch thick fillets) at the campsite. Fillet and remove skin from fillet, if belly meat is still on fillet cut off and discard about 1 inch of belly meat from each fillet. Cut fillets into 6" long or so chunks. Chunks should be drained of water but still moist. Put a 1/2 cup of bisquick in a quart baggie, put no more than one fry pan full of fillet chunks into baggie at a time, make the bag as big a volume as you can and then hold the top of the bag shut (capturing a volume of air), and shake until covered with bisquick. It's best to shake your fillets immediately before they go in the fry pan. Put your fry pan on the stove, add equal parts of canola oil and squeeze parquet margarine (enough to just about cover the bottom of the fry pan) and bring the pan up to sizzle before you add the fillets. The sueeze parquet is what I use for camping convenience, any margarine or butter will do. Adjust your heat down to about medium low and add the fillets. Sprinkle salt, pepper, and lemon pepper on each fillet. Loosely cover the fry pan, and be sure the heat is high enough to keep the fish frying. Also be sure there is enough oil in the pan so that you can see it frying all the way to the edges. Add more if necessary. Bisquick and margarine will scorch and burn if your heat is too high, but these two ingredients give that wonderful golden brown on your fillet. After 5 minutes flip the fillets over sprinkle with salt, pepper, and lemon pepper and cover. Thin fillets (less than 3/4 inch thick) will be done in another 5 minutes. For thicker fillets I flip again 10 minutes and again a 15 minutes (20 minutes total for 1.5 inch thick fillets). For really big trout I would cut 1.5 inch steaks (cross cut through the backbone and fry up the steaks rather than the hugely thick fillets. Or I'd grill it on the BBQ with a marinade baste, but that's another story. Bon appetite!

What a day it was! Fireworks reigned and rained over our rowing universe in yesterday's rowing day! We also heard from a crew member posted in a remote region - good to hear from you Will S! Well done everyone! And speaking of things well done,
in addition to paddler awards, Image is sharing some great recipes for trout with us (thanks Chris for asking!). I found myself wishing for a campfire and some sizzling trout at 6 AM....not your usual breakfast! Image We'll need to add the master chef's hat to his canoe cap collection.
