I've installed the latest PM5 firmware. I've also uninstalled and reinstalled ergdata.
I link my HR monitor (Polar H10) to PM5. During my workout live HR data reads out properly on PM5 screen and also on Ergdata screen. The PM5 summary post workout reads as normally (as in stating end of split HR as average HR for that split.
What's not working is that although ergdata shows the live HR data properly, it does not record it properly and show it on the logbook graph. It is very intermittent. Sometimes says a couple of minutes out of a long steady state. Sometimes the majority of the piece. With intervals the same, but it often drops whole intervals.
Any ideas??

Any other Bluetooth connection active? Headphones or something? Could interfere with BT connection of PM5 <-> ergData, so data rate drops or whatever. Same applies for 2.4GHz WLAN.

My first thought would be the batteries in your H10. My H9 eats batteries, and becomes flakey when they're low. The PM5 will ignore dropouts and give you the last good reading in each split.

A few days ago my H10 was dropping during my workout, first time in months. Polar App said battery was full, but I changed it anyway as I could not remember when I changed it last. Solid again since. Now my problem was different, as I could see the Polar Beats drop and watch the drop on the PM5 as well as Ergdata.
Your issue does sound more like an Ergdata issue, but you have to start the chase somewhere.
