Have you considered the full-fat, hard-core Pete Plan? [Although it, like the Wolverine Plan, includes intervals.]

Never considered it, I wanted to finish the Pete Beginner plan (24 weeks) first.

That's the one.
It is designed as a plan for racing training. It is not for regular use.

Do you mean how fast in terms of pace or pacing it within the 2k ie how fast for each 500m split?

Sub 8 is a good milestone to break, well done

A few short pieces, including a 500m test, can help to see how it's done.

At 1.78m and 30y, first try 3W/kg for 2k, so 230-240W (1:55) at rating 30 or whatever can give a comfortable rhythm.

At your age, 4 W/kg will be doable sooner or later, probably sooner.

After a long warmup, start the 2k fastish then slow down at 500 by about 3% in pace for the next 1k, finishing to taste.

A 2k test is just that: it serves to show what we need. Endurance and technique come to mind, there being little else.
08-1940, 183cm, 83kg.
