If you start to train hard, then it's usually a good idea to take at least 1 rest day per week. Some older athletes find they make better progress with even more rest, like one day off out of 6 or even 5.
Doing anything repetitive, like rowing, even if it is low impact will result in small strains and little niggling injuries, taking rest days let's you avoid having those develop into more serious repetitive strain injuries.

I don't mind being contradicted, especially by folks who know a lot more about this stuff than I.
It's a question of personal taste, but as I said, for a newbie I think it's better to do concentrate on technique than it is to do a deep-dive on data.
Although, I suppose stuff like stroke length could help refine things a bit, but that's later when one has a good foundation in the basics.
