Got my Erg on Monday, unboxed it yesterday and rode it today, now I'm walking like John Wayne.
I need a better padded seat, even the padded shorts I purchased weren't ideal, man this is painful.
Any suggestions / recommendations?

It ain't the padding that makes your seat more comfortable, it is the fit. best advise is to get fitted at a bicycle shop for a saddle with the correct measurements of your sit bones. In the long run, the padded saddle you think is more comfortable really isn't. If they were, every cyclist on the road would be using them.

One other suggestion. Check to see if you set the bars to high. If you are sitting too upright, that can cause pain.

1) Padding is almost never the answer to a more comfortable saddle.
2) Bike saddles are highly personal, and what is perfect for one person might be the proverbial "@ss hatchet" for another. You have to keep trying. Some bike shops and a few online places have loaner programs, where you can try a bunch of different options and purchase the one that works best for you.
3) Unless you're super lucky, miles on the bike / trainer are almost always needed to accustom your butt to the new loading. Be patient and unless the pain is excruciating within 10 minutes of getting on the saddle, things will improve with time.
4) Different shorts use different types of chamois, and will also vary in comfort. The ones with super-thick padding feel like baby diapers and might be a temporary solution, but in the long run won't be the right answer.
5) Keep trying different options and shorts. You will eventually find something that works. It isn't an easy search, but it isn't hopeless. Your LBS can help.

I've used Serfas Rx seats on my indoor and outdoor bikes with great success. They are the only seats that I can use comfortably.
There are a few different models and they can be specific to men and women due to bone structure differences. This is the one I use:

These seats better support the sit bones, and if positioned properly, almost feel like they are not there. There are other companies too with similar designs, but haven't tried them. Like noted in other posts, additional padding doesn't help and usually makes things worse. However, this model was more padded and would have been my second choice:
