My goal is to stay in cardio vascular shape now that the biking season is winding down. Also, I'd like to get into shape for my first ever season of x country skiing.
I have 3-4 days/week to train. Should I just do the Workouts of the Day, one short, one medium and one long, one each for a total of three/week? I can't imagine I'll ever race but I am a bit of a nerd about recording times and "racing against myself."

If you like structure, go visit the UK concept2 site and check out the interactive 2k training plan. It's got everything a data lover would want. Heart rate targets, paces, varied and challenging workouts.
Otherwise, i would recommend checking out the Pete Plan for beginners (google pete plan). This a simple and well put together training plan that will improve CV fitness (and make you fast on the erg)

Thanks. Looks good. I take it to get fast on skis you have to be outside on snow?!
