The seat shouldn't get anywhere near your heels... if it does you have not rocked forwards. You should have about 15 degrees +/- of forward lean (sitting up, but rocked forwards) try sitting at the catch with your seat touching your heels, now keep the handle where it is, slide the seat back and til...

Hands need to be relaxed and flow, and fast hands is fine as long as fast doesn't become rushed or forced... Without seeing how fast your hands away are it's hard to say if they are too fast or not. This is usually a result of sitting up straight and sliding the seat underneath when approaching front stops.
Make sure you are rocking forwards enough and staying rocked forwards, make sure you rock the pelvis rather than just curving your back.
And/or try keeping your heels down.
